Preheat oven to 350
*Clean and pierce the potatoes with a fork. Wrap in plastic wrap and microwave until tender. Let cool and skin will peel off easily. Throw in mixer and mash. Add sugar, vanilla, milk, butter, eggs. Make sure the mixture is cool enough when you add the eggs. Spread in a 9x12 casserole dish.
Comine the Topping ingredients: brown sugar, flour, melted butter and chopped pecans. Drop on top of potatos. Bake at 350 for 45 minutes.
You can make this the day before (or weeks before) and refrigerate or freeze before the final bake. |
