Roasted New Red Potatoes

3 lbs Red potatoes, small, cut in half
1/4 cup Olive oil
1 tsp Salt
1 tsp pepper
Adjust oven rack to lowest position and preheat over to 450º.

Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet.

Roast until tender and golden brown, about 30 minutes.
