Green Chili Hominy Casserole
 

1 cup Chopped onion, sautéed
4 15 oz Cans White hominy, drained and reserve 1/2 cup liquid
1 Tbsp Jalapenos juice
1/2 lb shredded cheddar cheese
10 slices bacon, fried crisp and chopped
1 cup Chopped green chilies
1-2 Pickled jalapenos, seeded and chopped (optional)
   
   
Preheat oven to 325º.

Sauté onions in the bacon drippings (I use broth). Set aside.

Heat the hominy in a separate pan, stirring often. When heated thoroughly, add jalapeno and hominy juice. Bring back to high temperature and add 3/4 of the cheese. When cheese is melted add half the green chilies and bacon and all the onions. Pour into a greased casserole dish and sprinkle with remaining cheese, bacon and chilies. (at this point you can refrigerate or freeze)

Bake until heated thoroughly, approximately 30 minutes.
