Preheat oven to
325º.
Sauté onions in the bacon
drippings (I use broth). Set aside.
Heat the hominy in a separate pan,
stirring often. When heated thoroughly, add jalapeno and hominy
juice. Bring back to high temperature and add 3/4 of the cheese.
When cheese is melted add half the green chilies and bacon and all
the onions. Pour into a greased casserole dish and sprinkle with
remaining cheese, bacon and chilies. (at this point you can
refrigerate or freeze)
Bake until heated thoroughly,
approximately 30 minutes.
