Black-eyed Pea Salad

3 cans Black-eyed peas, rinsed
2 oz Pimentos, diced
1/2 cup Purple onion, diced
   
DRESSING:  
1/4 cup Vinegar
1/4 cup+2 Tbsp Red wine vinegar
1/4 cup + 2 Tbsp Sugar
1/4 cup+2 Tbsp Vegetable Oil
3/4 Tsp Red pepper
1/4 Tsp Salt
   
Combine peas, pimentos and onion in a bowl and toss.

Combine dressing ingredients. Stir well and pour over pea mixture. Cover and chill for 3 hours or overnight.
