Old-Fashioned Oatmeal Bread
(recipe by Martha Kim, favorite of Minnie Todd, Wanda Hamblin and Patty Rogers)

2 cups Oatmeal, uncooked
1 quart Boiling water
1 Cup Black molasses
1 Tbsp Shortening
1 Tsp Salt
1 Pkg Dry yeast, dissolved in 1 cup lukewarm water
   
Mix all ingredients and let cool until they are lukewarm.

Add to mixture:
    10-12 CUPS flour...enough so dough won't stick to hands when kneading. Put on well-floured surface and knead well.

Cover with damp towel and let rise until double in bulk. Punch down and knead slightly. Cut into four equal parts. Shape into loaves and place in well greased loaf pans. Cover with towel and let rise about 2 hours. Bake 45 minutes at 350º or until loaf sounds hollow when tapped.
